- Preheat your oven to 180⁰C/350⁰F/Gas Mark 4. Mix the coconut and almond powder together, and spread out on a baking tray. Toast lightly in the oven for 5 minutes, until the mixture turns light brown.
- Pour the mixture into a glass bowl, and add the rest of the ingredients. Mix well with a wooden spoon, then knead until you have a cohesive paste. You might want to add a little more honey or extra spices at this stage to suit your tastes.
- Rolls the mixture into small balls, and top each one with a goji berry, an almond or both. Place each one into a mini paper cupcake case, and grate fresh organic lemon zest over the top.
