This warming winter side dish brings together orange root vegetables with the kick of chilli, coriander and cumin to create a side dish that is both nourishing and delicious. The sweetness of the three vegetables is tempered by the warmth of the spices: a beautiful dish that can be served either as a side dish or a main course.

So geht's

  1. Grind the spices, and blend together well.
  2. Wash, scrub, peel the vegetables as you need.
  3. Melt the coconut oil in a large pan, and add the vegetables, turning to coat well in the oil.
  4. Add the crushed spices, along with a pinch of salt.
  5. Preheat your oven to 220⁰C / 425⁰F / Gas Mark 7.
  6. Place the mixture in a roasting tin and roast in the oven for 40 minutes, turning halfway through.
