With its clean flavour and silky texture, asparagus not only tastes fantastic but is packed full of nutrients that nurture and nourish the body. High in potassium, antioxidants and vitamins, it was eaten thousands of years ago for its medicinal properties. It’s also a great source of asparagine: an amino acid that helps to eliminate toxins from the body. Try braising it in coconut oil for something a little different – or, if you’re not an asparagus fan, try this recipe with courgettes or endive.

So geht's

  1. Preheat your oven to 200⁰C / 400⁰F / Gas Mark 6.
  2. Wash the asparagus, and remove the fibrous stems from the ends.
  3. Warm the coconut oil in an ovenproof pan with a lid, and add about 4 tbsp of water. Add the asparagus to the pan, and cover.
  4. Place the covered pan into the oven. Braise for 20-30 minutes until caramelised. Remove from the oven, and add a pinch of salt or Seagreens® to taste.
